How long do these cook and at what temperature

Depending on your location/elevation, I went with a pie recipe directions. 350 degrees for about 20-30mins. But also depends on the thickness of the crust and how much filling. Use your own judgement by keeping an eye on them. Let them get golden brown and the filling a little bubbly.

What dough do you use?

I have yet to find a dough that will work. The press is a nice idea, but there is no way to add ANY filling without the top crust sinking down into the rounded cavity and pulling the edges of the crust down and away from the edge where it needs to be in order for the bottom crust to seal the two pieces together.

How long do you bake the pies for?

I don’t have a set time. When the crust looks cooked then it’s done. These molds are quite nice they are bigger than you think they are.

I was given the pie presses with a design on both sides. Isn't one side supposed to be flat so the filling doesn't leak out?

Yes, it is supposed to be flat. That is why I returned them. Williams Sonoma sells them for $19.99 currently on clearance for $9.99. I fell into the same trap and ordered them from Amazon. There are several sellers, and I believe they all sell the same junk. I tried to attach a photo from Williams Sonoma of how they actually look, but I can only post video - stupid. Go on Williams Sonoma and search "Fall Hand Pie Molds" and you will see.
