Can you turn the flame down really low, for simmering etc?

Yes you can turn down the flame quite low, but additionally there is a simmer ring especially for low simmer options.

Is there more to fixing the job than just sitting it in the hole

You will need a 13amp socket for the striker and a gas safe engineer to plumb it in, no flexible fittings, must be hard plumbed. Other than that its a piece of cake.

We haven't had any problem with spills. We have a seal which keeps the hob firmly in place and repels spills. I think it must have been supplied with the hob.
