Q: Does this griddle have a built in heat diffuser?

Yes, there is a built-in heat diffuser welded to the bottom. There are still hotter and cooler areas of the surface though, which after you learn them, can be used to slow or advance the cooking of individual food items. This thing is seriously heavy duty, obviously only for car camping or backyard use.

Q: some folks have mentioned a "drip can" for the grease, is that included or do you have to buy one or manufacture one?

According to the Camp Chef website, if you buy it from there it comes with the grease cup.

Q: I have used the griddle but I am unsure, how do I clean this?

Despite what you see here about using detergent, never, never use soap to clean. It removes seasoning and permeates the molecules within the steel or cast iron. Clean thoroughly with a non-abrasive scouring pad. Re-seasoning can be done with grapeseed oil which has a higher smoke point then olive oils or vegetable oils.

Q: Can you fit two of these side by side on a two burner unit? Also, is the drip hole only on the left side?

You should be able to fit two griddles side-by-side. I took some measurements. The inside length of the stove is 32.5 inches. The outside length of the griddle is just shy of 16 inches. The drip hole is only on the left side, but I'd imagine you could drill one anywhere along the gutter.
