Q: Does anyone know the difference between the red jars and the blue jars.

The red jars are Hormel, the blue jars are Armour Star. My family prefers the Armour Star.

Q: What is the shelf life?

On the shelf life question… go by the expiration date on the jar…. On the statement below and in other answers you say it’s too salty. The jar directions say to rinse the beef off with water. I run the slices under water a good while separating the slices to get each one. It’s never been too salty for us and we use this often as it’s our favorite cheese ball/spread recipe. Yum!
