I have followed complex recipes for making coconut curry soup, but the secret is 3 primary ingredients to get the flavour just right. This yellow curry paste, coconut milk, and some stock. The rest is just texture (shrimp, meat, bok choy, onion, etc). This paste is the best-kept secret for creating that familiar Thai restaurant favourite.
