This flour is marvelous for those sensitive to gluten or have difficulty digesting American flour. I have made gorgeous sourdough bread and tender, delicious cookies using this flour. I love baking and sharing with friends, especially since I can now include the ones with gluten sensitivity. I will definitely order again.

Great to get Italian produced real flour for a great price

If you have problems with GF, you should try this. The difference between the Italian pizza you eat and the one you eat here is a largely the flour.If you combine that with a really slow long fermentation, you might be quite amazed. In either event, the results are incredibly good in terms of the quality of the dough, and then the quality of the pizza. More than worth the money. One comment however, don’t send them an email with a question. They will never respond to you. I’m talking the company that makes the flower in Italy. They have a consumer email. But no one ever gets back to you. I tried several times without a single response back. My mom and dad were born in Italy so I am not saying this from some sort of prejudice point of view. It was just really shabby for a company that makes such a great product.
