It does pretty good in the wind depends on your skill level.

We purchased this plane and the p51 mustang. How do we set the remotes so both planes can be flown at the same time?

With 2.4g radio technology you dont have to worry about signal interference. Once a radio is bound to an airplane it will only effect that one airplane 👍

does this work on grass?

No..concrete or blacktop is ideal for take off. However until you get really good at Landing it, I would try to land it on grass to prevent any severe damage.
