Is this grown in Japan or California?

In Japanese, it says it is grown in Sacramento, California. Koshihikari is a varietal that is synonymous with Niigata prefecture, but it’s grown in a lot of different places. In my personal view there are different grades of US-grown koshihikari and this is a mid-level brand. A Japanese one is gonna be 2-3x the price of a CA koshihikari. That premium is too steep, in my view.

How many cups of rice can I get out of this bag (4.4 LB/2 kg)?

approximately 8 to 10 cups of uncooked rice, or 24 to 30 cups of cooked rice. Depending on how soft or firm you cook your rice, and if you use a rice cooker or not.

What variety of rice? I'm looking for Japonica.

It is japonica short grain which is one of two major rices grown and used in Asia. The 2nd is indica which is a medium grain and is usually had a dingy color to it.

So is this the new crop or old crop?

I would suppose that depends on when you actually make your purchase. I've bought the rice from the same vendor and each time the harvest/manufacturer date was within 6 months of my purchase. At any rate, I stand by my review that this is the best, affordable sushi grade rice that is readily available
