Q: Where does the wheat to make this flour come from?

In the product description it says the wheat is from Parma, Italy, the most important cereal-growing region of Northern Italy. Personally, I would not want flour made from wheat grown in the second most important cereal-growing region of Northern Italy. This flour is certified organic, Kosher and Halal.

Q: Is this flour used to make sourdough bread?

00 Flours have less protein in them than most bread flours, but I think this is on the higher side, and will be suitable. You wouldn't want to use a lower protein flour for long ferments with bread and sourdough.

Q: Is this Italian grown wheat, or is it imported American wheat, milled in Italy?

On the bag it talks about the Grassi family who has milled the wheat for many years and how they use no GMOs or pesticides. It says they have improved their processes over time but there is no mention of the wheat being grown in America. I am figuring it is Italian grown.

Q: What is the protein of this flour?

I’m so sorry but I have no idea. It worked great for my needs. (Pizza dough).
