How much alcohol is produced? Your brew produces a small amount of alcohol during the fermentation process. As the yeast consumes the natural sugars in rice, alcohol is produced as a by-product. The amount of alcohol produced will vary, but will be in the range of 4-6%. Dilute to taste. The fermentation bag is expanding? Fermentation is a metabolic process that converts sugars to acids, gases and/or alcohol. During this process, carbon dioxide is generated causing the bag to inflate. Vent regularly or leave a small gap on the zipper. Is the fermentation bag safe? Home Brew Probiotic's fermentation bag is produced using only USDA Food Grade materials. It is free from BPA and other harmful components. The brew is a cloudy white, is this normal? Yes. Unlike more refined rice wine beverages like Japanese Sake, Makgeolli is raw and unfiltered. The result is a cloudy beverage that tastes similar to Sake. The cloudyness is a result of all that rich probiotic goodness. When the sediment settles, you should shake up the bag. Sweetners and flavors: What is secondary fermentation? If you add a sweetner or flavoring to your finished Makgeolli, be mindful that sugars are fermentable. This can produce more alcohol. Brewers typically engage a secondary fermentation to produce bubbles and effervescence. If you engage in secondary fermentation, they suggest that you transfer the Makgeolli to a glass jar with a tight lid, to contain the gas. At this point it is an experiment and whatever happens is on you. How long will my Makgeolli last? The unopened kit will have an indefinite shelf life. Once brewed, Makgeolli's maximum probiotic potency diminishes past 30 days. They suggest that you refrigerate the Makgeolli after primary fermentation is complete, typically, after 3-4 days. Note that if you do not refrigerate, fermentation will continue and you may well end up with rice vinegar. What do I do with the used rice bag? Well, you can throw it away or compost it.
