Bold, Beautiful, and Bursting with Flavor – My Favorite Early Harvest EVOO
Paesanol Organic Unfiltered Extra Virgin Olive Oil is hands-down my favorite early season olive oil. It’s vibrant, bold, and unapologetically packed with flavor—exactly what I want when I’m not just cooking, but elevating a dish. Because it’s unfiltered and not decanted, the oil has a slightly cloudy appearance and a rich, green hue that sets it apart from typical supermarket EVOOs. That cloudiness is a sign of freshness—tiny olive particles still suspended in the oil—and it brings incredible depth to the flavor. The taste is unmistakably bold: grassy, peppery, and full of early-harvest bite. This isn’t your mellow, everyday cooking oil (for that, I use Partanna Smooth & Fruity, also from the same trusted Asaro family farm). Paesanol is what I reach for when I want something special—whether it’s drizzling over fresh tomatoes, dipping with crusty bread, or finishing a dish with a punch of Sicilian character. My entire family loves it, and we’ve made it a pantry staple for those times when quality and flavor really matter. If you appreciate strong, robust olive oils with a story behind them, this one’s hard to beat. TL;DR: My favorite early harvest EVOO. Unfiltered = slightly cloudy & greener in color. Big, bold, grassy, peppery flavor. Best for finishing, dipping, and flavor—not everyday frying. Comes from the legendary Asaro family farm in Sicily. Highly recommended if you love a powerful olive oil that tastes like the grove it came from. Enjoy!

Amazing taste!
This oil is definitely not the usual grocery store Olive oil! It adds a lovely spicy taste to cooked food. I bought it to drink as a nighttime medicinal elixir so taste is important. This is high-quality artisanal oil.

Excellent of its own accord
I bought this because I learned that it was made by Asaro Farms. I am so pleased with Partanna that I just had to try it. Being unfiltered, I was hoping that it would be stronger than Partanna, but that is not the case. While it seems an excellent oil, and feels good on the tongue — the bottle I have is somewhat milder than the Partanna I have. And yet the flavor seems identical, with the familiar after burn in the back of the throat. Also super buttery, thick, a bit salty, with more green color — I love it. I guess I am forever doomed, having to buy all Asaro products, so that I can make these subjective comparisons to satisfy my curiosity.

Good quality olive oil
This product is unfiltered olive oil. I was expecting it to be a bit more flavorful with deeper green color. However, it is still a very good olive oil with a good flavor.

Organic and Unfiltered !
Best EVOO on the Market. Will use no other EVOO on my Salad or Pizza. Remember to Shake before using, so it mixes well and comes out Green. All Olives from Sicily. "Excellent"

I don't use this anymore - I get fresher oil from the Internet
Why 5 stars if I don't use it? I think this is the best Olive Oil on Amazon. However, there is no date of harvest or production on the bottle or description. I just bought a gallon of fresh organic California olive oil, harvested in January. I paid just over $100 with shipping. There is no reason these producers can't put the press date on the bottle, except that they don't want you to know. If this company took this last step to become the best of the best, they would really earn my loyalty. Unless this olive oil is old. Is it? Who could know? Since this oil is very expensive, I suggest that buyers {GASP} go off of Amazon and seek farms that actually state production dates and {GASP AGAIN} actually run out of product after they sell the fresh batch. Otherwise, why pay so much for something that is supposed to be fresh? Another option for those who really have the cash, is the Olive Oil Hunter, who will send you fresh olive oil from around the world at a price that I believe is about 50% higher than this oil. His thing is 30 days from tree to table. I bought my gallon from Olive Leaf Hills. Having tried both the Paesano and my gallon of super fresh oil, I can say that the super-fresh tastes SUPER-fresh! I really does smell like fresh cut grass. Anyway, time to go bake a loaf of bread to dip in it!
