Great GF Flour!
I love this flour. It can be substituted about 1:1 for regular flour (although it requires more liquid). It makes really soft and delicious items without having to make any adjustments to the recipe (except the extra liquid) or adding binders like xanthan gum. I have been using this flour for years.

For the price OK
I don't think it's as good as Otto's but at the time had to save money. Worked well but the flavor was off a little to me.

Seems to work just like wheat flour
I was skeptical at first. The wife had to cut gluten out of her diet per her doctor. My wife also had a nut allergy which eliminated most all other flours. I had tried coconut flour and it seemed to burn too easily. Then I discovered Cassava flour. I honestly think I like it better than wheat flour. It fries well when you are frying chicken or pork chops. I also was able to make a rue to make gravy with it. With the use of olive oil, a little plant based butter, and some chicken broth I was able to make a gluten free and dairy free gravy for the chicken picata. Probably sounds hideous but it actually was pretty darn good. I am by NO means a health food nut. I'm all about battered and deep fried. It's worth a try.

Good flour
If you have a recipe that calls for Cassava Flour, this is the place to buy it. It is hard/impossible to find in your local grocery store. It's expensive, but if you need it, you need it.
